Primitivo: Of uncertain origin, its introduction into Apulia may perhaps be traced back to the Phoenician and Greek colonization.
However, it should be pointed out that this selection was carried out within the “old local vineyards”; therefore, the vine was already known in the area during that time, since it could be found in old vineyards of the late 18th century. Primitivo is identical to Zinfandel.

Vinification: 27 days prolonged maceration of the wine on its skins in stainless steel tanks
Maturing and aging: French and American oak, stainless steeltanks and in bottles.
Tasting notes: the complexity of the inklings and of the specific perfumes create excitement in a complex harmony deriving from an extended cold grinding. Fowl, hard cheeses and cold meats are the typical combinations.
