Harvestd at optimsl phenolic ripeness, and fermented at cool temperatures with a combination of strategically selected yeast strains, this wine was pressed off the skins after 20-23 days and ages in a combination of once filled and neutral French Oak barrels for 24 months to showcase the beauty and complexity of this noble grape variety.
Flavor Profile: The blend in hues from raisin to sangria to
ruby purple showcases Cabernet’s genetic predisposition to tiny berries
packed with color making molecules called anthocyanidins. Aromatics are
initially a bit coy, holding black just until a few tight swirls expose
its alluring presence Blackberry Liqueur, black currant and vanilla
combine New World flavors with savory herbaceous notes of olive and
black pepper typically found in Cabernet from Bordeaux.
